Recipe: Stay As Cool As This Refreshing Cucumber Soup This Summer

The humble cucumber or kheera is a staple in most Indian households. In my house, we either make it into a kuchchumber salad or just cut it into sticks, sprinkle salt and lime juice and munch on this crunchy summer vegetable. But it’s always good to add something new to the menu, so today’s recipe is a cold cucumber soup.

Cucumbers are packed with vitamins which have antioxidant, anti-inflammatory and immunity boosting benefits. They contain beta-carotene, a form of vitamin A that helps maintain eye health. Since they’re naturally cooling, they are often used to prevent dehydration and avoid constipation. Did you know that cucumbers are natural analgesics? This means that the flavonoids in cucumber act as natural painkillers. So, eating cucumber helps alleviate any pain your kid may be suffering.

Ingredients – Serves 3

  • 2 cups plain yoghurt
  • 2 cucumbers, peeled and sliced
  • 1 onion, minced
  • 1 clove garlic, minced
  • 1/4 tsp ground cumin (jeera powder)
  • Juice of 1 Lime
  • 1-3 tsp freshly chopped dill (shepu/ suva bhaji)
  • Salt to taste

  • Lay the sliced cucumbers on a tray lined with paper towels and sprinkle with salt liberally. The idea is to let the cucumbers release moisture. Leave the cucumbers for about 20 minutes. Rinse the cucumbers after that and pat dry. This will help make the soup creamier and thicker.
  • Put the cucumber, yoghurt, onion, garlic, fresh dill, lime juice and ground cumin in the blender and puree until it is smooth.
  • Adjust the seasoning and chill in the fridge for at least an hour before serving.

Your light and refreshing bowl of soup is ready for a hot sultry day. Isn’t it a perfect accompaniment to your lunch/dinner?
